Description

In this video I show you how to make albondigas (Mexican meatball soup) two different ways. I grew up eating albondigas in a broth made of chiles. That is one of the ways I demonstrate and the second is one I have made before to feed those that don’t like spicy foods. Below are the ingredients.

Ingredients for the albondigas (meatballs):
• 1 lb of ground turkey or beef
• 1 tomatillo - diced
• ¼ onion - diced
• ¼ of green bell pepper - diced
• ½ to 1 teaspoon of salt
• ¼ of jasmine rice
• 1 large egg

Ingredients for the chile (broth):
• 3 guajillo chili peppers
• 2 New Mexico dried peppers
• 6 Chile de Arbol
• 2 garlic cloves
• ¼ onion
• 1 table spoon (or to taste) of chicken bouillon
• 10 cups of water or chicken broth (9 for broth, 1 to blend the chiles)

Ingredients for tomato broth:
• 2 roma tomatoes
• 2 garlic cloves
• ¼ of onion
• 1 table spoon (or to taste) of chicken bouillon
• 10 cups of water or chicken broth (9 for broth, 1 to blend tomatoes)

Veggies:
You can add any vegetables you’d like. I only added 1 yellow squash and ½ of a large zucchini. However, you can add carrots, celery or potatoes.
